minutesWe aimed to keep Sabi from eating store-bought sweets. So, we made milk and ragi noodles at home and called them ‘milky worms’. It turned into a dessert she really liked.
Ingredients
3 cups milk
Roasted ragi vermicelli or ragi noodles
1 teaspoon ghee
1.5 cups jaggery powder
Finely slices almonds for garnishing
Directions
- Place pan over medium flame and heat the milk, stirring often until it is near boiling
- Lower heat to med-low, and cook uncovered, stirring every 5-10 minutes until the milk is reduced by about 1/3
- Take a pan and add 1 teaspoon of ghee, roast the noodles / vermicelli in it. Ensure you get roasted version so that it doesn’t require too much cooking
- Add the roasted vermicelli into the reduced hot milk. It will soften in 2-3 minutes. Continue to cook for another 5 minutes
- Add jaggery powder and stir until it melts fully
- Depending on how thick you want the final mixture to be, you can continue to cook for another 10 minutes or stop the process here. My daughter likes it to be bit juicy and milky
- Garnish it with nuts
