“Do Chua” – Vietnamese pickled carrots & daikon: A tangy, crunchy addition rich in vitamins, aiding digestion & detox.

Ingredients

  • Vertically chopped carrots, radish, beetroots. You can also added cauliflowers, cucumbers to it

  • Apple Cider Vinegar

  • Salt

  • Jaggery

  • Hot Water

Directions

  • Salt the vegetables and let it rest for 15-20 mins
  • After salting the vegetables, rinse it well and squeeze out any excess water. It’s ready when it doesn’t snap or bend further and as soft enough.
  • Add vinegar, jaggery and pour in hot water
  • This should last up to 2 weeks and makes a great side dish for many recipes.
