Ingredients
5 shallots (onions), thinly sliced
1 cup cooking oil of your choice

Directions
- Thinely slice the shallots. Transfer the shallots to a plate in a single layer. Microwave for one minute. Dab excess moisture with a paper towel.
- Add the shallots to a small pot along with the oil, enough to cover the shallots. On medium heat, fry for about 5-7 minutes. Remove immediately with a strainer when it begins to turn a light, golden grown. It will continue to cook once removed.
- Transfer the shallots to a paper towel lined plate to absorb excess oil.
- Sprinkle a pinch of salt.
